I’ve been munching on these oatmeal cookie bites from The Faux Martha’s new book The Minimalist Kitchen all week. They’re simple, healthy, and make a perfect snack. Be sure to check out Melissa’s book for weeknight meal inspiration and kitchen organization tips and continue reading for the recipe. Oatmeal Cookie Bites

Slightly adapted from The Minimalist Kitchen by Melissa Coleman

Makes 38 balls

2 cups large flaked unsweetened coconut

1 1/2 cups rolled oats

1/4 cup dried currants

1/2 cup almond butter

1/2 cup honey

1/4 cup hemp seeds

1 teaspoon vanilla extract

1/4 teaspoon salt

In a food processor, blend the coconut and oats into a fine powder. Add the currants and  blend again to roughly chop. Add the remaining ingredients and blend until a dough forms. Using a 2-teaspoon sized spring release scoop, scoop the dough, rolling between your palms to form a ball. Store in an airtight container in the fridge.
