Oatmeal Cookie Bites
Slightly adapted from The Minimalist Kitchen by Melissa Coleman
Makes 38 balls
INGREDIENTS
2 cups large flaked unsweetened coconut
1 1/2 cups rolled oats
1/4 cup dried currants
1/2 cup almond butter
1/2 cup honey
1/4 cup hemp seeds
1 teaspoon vanilla extract
1/4 teaspoon salt
PROCEDURE
In a food processor, blend the coconut and oats into a fine powder. Add the currants and blend again to roughly chop. Add the remaining ingredients and blend until a dough forms. Using a 2-teaspoon sized spring release scoop, scoop the dough, rolling between your palms to form a ball. Store in an airtight container in the fridge.
I can’t stop looking at the first photo – the bites look like they are floating! Especially the ones toward the bottom of the image. Love it!
