I’m spending a long weekend in the Methow Valley camping, hiking and biking. Have I told you about the Methow yet? It’s pretty much the greatest place on earth. There are mountains and rivers, forests and meadows, and miles and miles of hiking and biking. The valley has been our home away from home since we moved to Seattle. It’s the one place where we really feel like ourselves. I’m generally not a lavender person, but I had the opportunity to try Yossy’s Pistachio Pound Cake with Lavender Strawberries at her book talk here in Seattle and fell in love with this flavor combo. These popsicles are really easy to make, refined sugar free and perfect for a holiday weekend. Enjoy!

Strawberry Lavender Popsicles

Makes 8-10

INGREDIENTS

4 cups strawberries, stems removed

1/2 cup coconut sugar

1 teaspoon lavender buds

1/4 cup water

1 tablespoon fresh lemon juice

PROCEDURE

In a small bowl, combine the coconut sugar and lavender buds. Rub the sugar and the lavender buds between your fingers until fragrant. Combine the lavender sugar, strawberries, water and lemon juice in a blender and puree until smooth. Divide the mixture between your popsicle molds and freeze.
