I’ll be doing a workshop with Luisa Brimble and Marta Greber for the first few days, then I’ll be traveling around with my mom and meeting up with Anders on the weekends. He’ll be studying with some famous architect on a farm somewhere the whole time. But mom and I are excited to see the sites, explore the coast and hang out.

It’s super simple and packed with flavor. The cauliflower is crispy on the outside and creamy inside and is smothered in rich roasted red chili paste, spicy sriracha and sour lime juice. FRIED CAULIFLOWER WITH ROASTED RED CHILI PASTE

Serves 2

INGREDIENTS:

1/4 cup coconut oil

6 curry leaves

1 head cauliflower, trimmed and cut into florets

3 tablespoons roasted red chili paste

1 tablespoon sriracha

juice from 1/2 lime

cilantro

PROCEDURE

Heat the coconut oil in a large skillet over medium heat. Add the curry leaves and fry for a few seconds until aromatic. Add the cauliflower and cook, stirring ocasionaly until the cauliflower is golden, crispy and cooked through. In a small bowl, whisk together the red chili paste, sriracha and lime juice. Once the cauliflower is cooked add the sauce to the pan and continue cooking, tossing the cauliflower until coated and sticky. Serve the cauliflower topped with a handful of chopped cilantro.
