When I started this blog I avoided discussing personal details and intimate feelings. I didn’t feel comfortable presenting what I felt was a virtual and inevitably incomplete depiction of who I am. I hoped that presenting thoughtful recipes and pleasing photographs would be enough to engage my viewers. Now, a few months later, I find myself gravitating more and more towards recipes and stories that portray my life. There is something therapeutic about processing emotions, thoughts and events in this way and I am so grateful for this space and the resources that allow me to do so.

So, here are a few tidbits that I hope will help you begin to understand who I am: I’m a country girl at heart. I grew up exploring the woods and playing in the dirt. I’ve always had a vivid imagination, which served me well as a child and now mostly means that I get easily carried away envisioning the worst-case scenario. From an early age, I enjoyed culinary endeavors, which took the form of mud pies (a delicious combination of dirt, water and stolen eggs) and cheese made from grass. CHOCOLATE COCONUT MACAROONS {VEGAN/GLUTEN FREE}

Makes one dozen

INGREDIENTS

1 cup shredded unsweetened coconut plus extra for coating

½ cup unsweetened cocoa powder

1/3 cup maple syrup

1/3 cup coconut oil

½ teaspoon flaky sea salt

1 vanilla bean

PROCEDURE

Slice the vanilla bean in half lengthwise and using the dull side of a knife, scrape the seeds into the bowl of a stand mixer. Add the remaining ingredients and mix on medium with the paddle attachment. Roll the macaroons into balls and coat with shredded coconut.
